Chewy Stem Ginger Cookies

Hello everyone, it's time for another Christmas bake! Surprise it is another stem ginger recipe! I love ginger cookies and wanted to add even more ginger goodness to a chewy ginger recipe. Are you doing any baking during the holidays?!

2 and 1/4 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

2 teaspoons cornstarch

1/4 teaspoon salt

2 teaspoons ground ginger

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup unsalted butter, melted

3/4 cup brown sugar

1/4 cup granulated sugar

1 egg

1 teaspoon vanilla extract

¼ tsp of orange extract

1/4 cup molasses

¼ cup chopped stem ginger

Zest of one orange

 

Optional : Stem ginger syrup glaze

3 tbs Stem ginger syrup

1 cup Confectioner sugar

1 tsp Vanilla

Pinch of salt


Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper or a silicone mat. Set aside.

  • In a large bowl, whisk together the butter and sugars until combined. Add the egg, vanilla, orange, and molasses, and mix until combined.

  • In a separate bowl whisk together the flour, baking powder, baking soda, corn flour, salt, and spices.

  • Add the dry ingredients, and mix until just combined.

  • Chop the stem ginger into small pieces.

  • Fold in the chopped stem ginger and orange zest.

  • Using a medium cookie scoop, drop scoops of the dough onto a plate or two and pop in the freezer for 10-15 min.

  • Then place six cookie dough balls on the prepared cookie sheet, and bake for 10 - 12 minutes.

  • Let cookies cool on the cookie sheets for a few minutes before transferring them to a wire rack to cool completely.

  • Optional icing- Put confectioner sugar in a small bowl add salt, vanilla, and stem ginger syrup mix until combined. Drizzle on the cookies!
